End of Summer Squash Salad

Growing butternut squash is relatively easy, the plant can be grown from seeds, no special care or watering is required.

This recipe is my summer discovery, since I usually used to cook quash only for a soup in the winter, but this is defiantly a summer delight.

Adding Okra, another summer plant which wasn't so difficult to grow as well, and hard to find in the market. I try to use to eat seasonal and use whatever is ready to harvest in the garden.

Sooo what are you waiting for? start preparing this amazing salad before the summer ends!


Butternut Squash Salad

2 butternut squash

5-6 okra

1 Tbsp chopped green onion

1 Tbsp chopped cilantro

1 Tbsp torn basil leaves

60 gr Sainte-Maure cheese [or grilled Halloumi cheese or goat Feta cheese]

1/2 Tbsp olive oil

1 Tsp agava syrup [or honey]

Juice from 1 lemon [Lime will be the best]

salt


Cut the squash into straps, brush with oil it and add a hint of salt.

Bake for 45 min until it's golden [180C/350F]

Cut the okra into half and lightly pan fry with olive oil


Mix it all together and enjoy you summer (:
